Step 1
In a medium bowl, combine the crushed chocolate wafer cookies and melted butter. Press the mixture into the bottom and up the sides of a 9-inch pie dish. Place in the freezer for 10 minutes to set.

In a small saucepan, combine the chocolate chips and 240 ml of heavy cream. Cook over low heat, stirring constantly, until the chocolate is melted and the mixture is smooth. Pour half of the mixture over the crust and spread evenly. Freeze for another 10 minutes.

In a large bowl, beat the cream cheese, sugar, and vanilla extract until smooth and creamy. Dissolve the instant coffee granules in 15 ml of hot water and add to the cream cheese mixture. Beat until well combined.

In another bowl, whip the remaining 240 ml of heavy cream until stiff peaks form. Fold the whipped cream into the cream cheese mixture until well combined. Spread the mixture over the chocolate layer in the pie crust.

Pour the remaining chocolate mixture over the cream cheese layer and spread evenly. Refrigerate the pie for at least 2 hours or until set.
