  • 5 garlic bulbs
  • 1 rice cooker

Directions

Step 1
Clean the garlic bulbs by removing any dirt or debris. Do not peel the cloves.

Wrap each garlic bulb tightly in aluminum foil.

Place the wrapped garlic bulbs in the rice cooker.
Step 4
Set the rice cooker to the 'warm' setting. Do not use the 'cook' setting.
Step 5
Leave the garlic in the rice cooker for 3 to 4 weeks, checking occasionally to ensure the 'warm' setting is maintained.
Step 6
After the fermentation period, unwrap the garlic bulbs. The cloves should be black and soft.
Step 7
Store the black garlic in an airtight container in the refrigerator for up to 3 months.
