  • 0.5 cup fresh basil
  • 8 fresh tomatoes
  • 4 garlic cloves
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 onion
  • 1 teaspoon salt

Directions

Step 1
Heat the olive oil in a large pot over medium heat.

Add the chopped onion and cook until translucent, about 5 minutes.

Stir in the minced garlic and cook for another 1-2 minutes.

Add the peeled and chopped tomatoes to the pot and cook for 10 minutes, stirring occasionally.

Pour in the chicken broth, then bring the mixture to a boil. Reduce heat and let it simmer for 20 minutes.

Use an immersion blender to puree the soup until smooth.
