Directions
Step 1
In a bowl, combine soy sauce, sake, mirin, ginger, and garlic. Mix well.

Add chicken pieces to the marinade and mix to coat evenly. Cover and refrigerate for at least 30 minutes.

Heat oil in a deep fryer or large pot to 170°C (340°F).

Dredge marinated chicken pieces in potato starch, shaking off any excess.
