  • 30 grams butter
  • 32 grams cornstarch
  • 4 egg whites
  • 4 egg yolks
  • 32 grams flour
  • 2 lemon
  • 1 pie crust
  • 0.5 teaspoons salt
  • 200 grams sugar
  • 100 grams sugar
  • 355 milliliters water

Directions

Step 1
Preheat your oven to 350°F (175°C).
Step 2
In a medium saucepan, whisk together 200 grams of sugar, flour, cornstarch, and salt.
Step 3
Gradually stir in water, lemon juice, and lemon zest.
Step 4
Cook over medium-high heat, stirring frequently, until the mixture comes to a boil.
Step 5
Stir in butter.
Step 6
Place egg yolks in a small bowl and gradually whisk in 1/2 cup of the hot sugar mixture.
Step 7
Whisk egg yolk mixture back into remaining sugar mixture.
Step 8
Bring to a boil and continue to cook while stirring constantly until thick. Remove from heat.

Pour filling into the baked pie crust.
Step 10
In a large glass or metal bowl, whip egg whites until foamy. Add 100 grams of sugar gradually and continue to whip until stiff peaks form.
Step 11
Spread the meringue over the pie, sealing the edges at the crust.
Step 12
Bake in preheated oven for 10 minutes or until meringue is golden brown.
