Ingredients

  • 50 g all-purpose flour
  • 30 ml brandy
  • 200 g kefalotyri or kasseri cheese
  • 1 lemon
  • 30 ml olive oil

Directions

Step 1
Cut the cheese into slices about 1 cm thick.
Step 2
Dredge the cheese slices in flour, shaking off any excess.
Step 3
Heat the olive oil in a frying pan over medium-high heat.
Step 4
Fry the cheese slices until golden brown on both sides, about 2-3 minutes per side.
Step 5
Remove the pan from heat and pour the brandy over the cheese.
Step 6
Carefully ignite the brandy with a long lighter or match to flambé the cheese. Let the flames subside.
Step 7
Serve immediately with lemon wedges.
