  • 2 bell pepper
  • 0.5 tsp black pepper
  • 1 tsp dried oregano
  • 3 cloves garlic
  • 30 ml lemon juice
  • 200 g mushrooms
  • 60 ml olive oil
  • 1 red onion
  • 1 tsp salt
  • 2 zucchini

Directions

Step 1
Preheat the grill to medium-high heat.
Step 2
In a large bowl, mix olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper.
Step 3
Add the bell peppers, zucchinis, red onion, and mushrooms to the bowl, tossing to coat them evenly in the marinade.
Step 4
Thread the vegetables onto skewers, alternating the different types of veggies.
Step 5
Grill the skewers for about 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.
Step 6
Serve the grilled veggie skewers hot and enjoy!
