Step 1
Heat olive oil in a large pot over medium heat.

Add chicken thighs and cook until browned on all sides. Remove and set aside.

In the same pot, add chopped onion and minced garlic. Cook until onions are translucent.

Add sliced carrots and cubed potatoes. Stir and cook for 5 minutes.

Pour in chicken broth and add tomato paste. Stir to combine.

Return the chicken thighs to the pot. Add bay leaf, thyme, salt, and black pepper.

Bring to a boil, then reduce heat to low. Cover and simmer for 30 minutes, or until chicken is cooked through and vegetables are tender.

If using, add peas in the last 5 minutes of cooking.
