  • 20 g basil leaves
  • 0.5 tsp black pepper
  • 1 cucumber
  • 60 ml extra virgin olive oil
  • 1 red onion
  • 30 ml red wine vinegar
  • 500 g ripe tomatoes
  • 1 tsp salt
  • 200 g stale bread

Directions

Step 1
Cut the stale bread into cubes and place in a large bowl.
Step 2
Chop the ripe tomatoes into bite-sized pieces and add to the bowl.
Step 3
Peel and slice the cucumber, then add to the bowl.
Step 4
Thinly slice the red onion and add to the bowl.
Step 5
Tear the basil leaves into smaller pieces and add to the bowl.
Step 6
In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, salt, and black pepper.
Step 7
Pour the dressing over the salad and toss everything together gently.

Let the salad sit for about 30 minutes to allow the bread to soak up the flavors.
