A delicious stuffed pork tenderloin filled with a savory mixture of breadcrumbs, herbs, and cheese, perfect for a special dinner.
Directions
Step 1
Preheat your oven to 180°C (350°F).
Step 2
In a bowl, combine the breadcrumbs, grated Parmesan cheese, minced garlic, chopped parsley, olive oil, salt, and black pepper. Mix well.
Step 3
Butterfly the pork tenderloin by cutting it lengthwise down the middle, being careful not to cut all the way through.
Step 4
Spread the breadcrumb mixture evenly over the inside of the tenderloin.
Step 5
Roll the tenderloin back up and secure it with kitchen twine.
Step 6
In a large ovenproof skillet, melt the butter over medium-high heat. Add the tenderloin and sear on all sides until golden brown.
Step 7
Transfer the skillet to the preheated oven and roast for 25-30 minutes, or until the internal temperature of the pork reaches 63°C (145°F).
Step 8
Remove the tenderloin from the oven and let it rest for 10 minutes before slicing.
