Mexican Red Rice, also known as Arroz Rojo, is a flavorful and vibrant side dish made with tomatoes, garlic, onions, and spices. This rice is a staple in Mexican cuisine and pairs perfectly with a variety of main dishes.
Directions
Step 1
Rinse the rice under cold water until the water runs clear. Drain well.
Step 2
In a large skillet, heat the vegetable oil over medium heat. Add the rice and cook, stirring constantly, until the rice is lightly golden, about 5 minutes.
Step 3
Add the onion and garlic to the skillet and cook until the onion is softened, about 2 minutes.
Step 4
Stir in the chicken broth, tomato sauce, carrot, peas, salt, and ground cumin. Bring the mixture to a boil.
Step 5
Reduce the heat to low, cover, and simmer until the rice is tender and the liquid is absorbed, about 20 minutes.
Step 6
Remove from heat and let the rice sit, covered, for 5 minutes before serving. Fluff with a fork and serve warm.
