  • 500 g all-purpose flour
  • 200 g butter
  • 2 g cinnamon
  • 1 egg yolk
  • 1 orange orange zest
  • 250 g ricotta cheese
  • 5 g salt
  • 150 g semolina
  • 150 g sugar
  • 5 ml vanilla extract
  • 250 ml water
  • 500 ml whole milk

Directions

Step 1
In a large bowl, combine the all-purpose flour and salt. Gradually add the water and mix until a dough forms. Knead the dough until it becomes smooth. Cover and let it rest for 30 minutes.
Step 2
Divide the dough into four equal parts. Roll each part into a very thin sheet. Brush each sheet with softened butter and stack them on top of each other. Roll the stacked sheets into a log and refrigerate for at least 2 hours.
Step 3
In a medium saucepan, bring the milk to a boil. Gradually add the semolina, stirring constantly until it thickens. Remove from heat and let it cool.
Step 4
In a bowl, combine the ricotta cheese, sugar, vanilla extract, cinnamon, orange zest, and egg yolk. Add the cooled semolina mixture and mix well to form the filling.
Step 5
Preheat the oven to 200°C (392°F).

Cut the dough log into 1 cm thick slices. Roll each slice into a cone shape and fill with the ricotta mixture.
Step 7
Place the filled cones on a baking sheet lined with parchment paper. Bake for 20-25 minutes, or until golden brown.
