  • 0.5 tsp black pepper
  • 50 g breadcrumbs
  • 2 cloves garlic
  • 250 g ground beef
  • 2 tbsp olive oil
  • 1 onion
  • 50 g parmesan cheese
  • 2 tbsp parsley
  • 1 tsp salt
  • 1 tomato
  • 4 zucchini

Directions

Step 1
Preheat the oven to 180°C (350°F).
Step 2
Cut the zucchinis in half lengthwise and scoop out the pulp, leaving about 1 cm of the shell.
Step 3
Chop the zucchini pulp and set aside.
Step 4
In a large pan, heat the olive oil over medium heat. Add the onion and garlic, and sauté until fragrant.
Step 5
Add the ground beef to the pan and cook until browned. Stir in the chopped zucchini pulp and diced tomato. Cook for another 5 minutes.
Step 6
Remove the pan from heat and stir in the breadcrumbs, Parmesan cheese, salt, pepper, and parsley.
Step 7
Fill the zucchini shells with the mixture and place them in a baking dish.
Step 8
Bake the stuffed zucchinis in the preheated oven for 25-30 minutes, until the zucchinis are tender and the tops are golden brown.
