Ingredients

  • 15 grams Cornstarch
  • 300 ml Dry white wine
  • 225 grams Emmental cheese
  • 1 clove Garlic
  • 1 pinch Ground black pepper
  • 225 grams Gruyère cheese
  • 15 ml Kirsch
  • 5 ml Lemon juice
  • 1 pinch Nutmeg

Directions

Step 1
Rub the inside of a cheese fondue pot with the halved garlic clove; discard garlic.
Step 2
In a medium bowl, toss the Gruyère and Emmental cheeses with the cornstarch.
Step 3
In a medium saucepan, bring the wine and lemon juice to a gentle simmer over medium heat.
Step 4
Gradually add the cheese to the simmering wine, stirring constantly in a figure-eight motion until the cheese is melted and smooth.
Step 5
Stir in the kirsch, pepper, and nutmeg.
Step 6
Transfer the cheese mixture to the fondue pot and keep warm over a low flame. Serve with bread cubes, vegetables, and other desired dippers.
