- 2 peaches
- 2 tbsp simple syrup
- 750 ml sparkling wine

Puree the peaches in a blender until smooth.

Pour the peach mixture into a fine mesh strainer set over a bowl to remove any solids.

Divide the peach puree among chilled champagne flutes, filling each glass about one-third full.
