Step 1
Place the pork shoulder and liver in a large pot and cover with water. Bring to a boil, then reduce heat and simmer until tender, about 45 minutes.

Remove the meat from the pot, reserving the broth. Allow the meat to cool, then grind it using a meat grinder or food processor.

In a large skillet, sauté the onion, bell pepper, celery, and garlic until softened, about 5 minutes.

In a large bowl, combine the ground meat, sautéed vegetables, cooked rice, green onions, parsley, cayenne pepper, salt, and black pepper. Mix well.

Stuff the mixture into the pork casing, being careful not to overfill. Twist the casing every 6 inches to form individual boudin links.

Cook the boudin by steaming or boiling for about 10 minutes, or until heated through.
