  • 250 g all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 50 g brown sugar
  • 110 g butter
  • 240 g confectioners' sugar
  • 1 egg
  • 200 g granulated sugar
  • 1 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 30 ml milk
  • 180 g pumpkin puree
  • 0.5 tsp salt
  • 1 tsp vanilla extract

Directions

Step 1
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
Step 2
In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

In a large bowl, cream together butter and sugars until light and fluffy. Beat in pumpkin, egg, and vanilla until well blended.

Gradually add the dry ingredients to the pumpkin mixture, mixing until just combined.
Step 5
Drop dough by tablespoonfuls onto prepared baking sheets, spacing cookies about 2 inches apart.
Step 6
Bake for 15 minutes, or until edges are golden. Allow cookies to cool completely on wire racks.
Step 7
For the icing, combine confectioners' sugar and milk in a small bowl, stirring until smooth. Drizzle over cooled cookies.
