Classic Royal Icing

  • 3 egg whites
  • 1 tablespoon lemon juice
  • 450 grams powdered sugar
  • 1 tablespoon water

Directions

Step 1
In a large bowl, sift the powdered sugar to remove any lumps.
Step 2
Add the egg whites and lemon juice to the powdered sugar.
Step 3
Using an electric mixer, beat the mixture on low speed until the sugar is incorporated and the mixture is shiny.
Step 4
Turn the mixer to high speed and beat until the mixture forms stiff, glossy peaks, about 5 to 7 minutes.
Step 5
If the icing is too thick, add water a few drops at a time until the desired consistency is reached.
Step 6
Transfer the icing to a piping bag or use immediately to decorate your baked goods.
