These traditional Australian cookies, also known as Anzac Biscuits, are a delightful combination of coconut and oats with a sweet, buttery flavor. They are perfect for a snack or dessert.

Step 1
Preheat your oven to 175°C (350°F). Line a baking tray with parchment paper.

In a large mixing bowl, combine the rolled oats, flour, sugar, and shredded coconut.

In a small saucepan over low heat, melt the butter and golden syrup together.

Dissolve the baking soda in the boiling water and then add it to the melted butter and syrup mixture. Be careful as it may foam up.

Pour the wet ingredients into the dry ingredients and mix until well combined.

Roll tablespoons of the mixture into balls and place them on the prepared baking tray, allowing some space for spreading.

Flatten each ball slightly with the back of a spoon.

Bake for 10-15 minutes or until the cookies are golden brown.

Allow the cookies to cool on the tray for 5 minutes before transferring them to a wire rack to cool completely.
