  • 30 g all-purpose flour
  • 170 g bittersweet chocolate
  • 30 g butter
  • 30 g cornstarch
  • 4 egg yolks
  • 200 g granulated sugar
  • 1 pie crust
  • 0.5 tsp salt
  • 2 tsp vanilla extract
  • 700 ml whole milk

Directions

Step 1
In a medium saucepan, combine the sugar, flour, cornstarch, and salt.

Gradually whisk in the milk until the mixture is smooth.
Step 3
Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
Step 4
Boil for 1 minute, then remove from heat.
Step 5
In a separate bowl, beat the egg yolks. Gradually whisk in about 1 cup of the hot milk mixture.
Step 6
Return the egg yolk mixture to the saucepan and cook for an additional 2 minutes, stirring constantly.

Remove from heat and stir in the butter, vanilla extract, and chopped chocolate until smooth.
Step 8
Pour the chocolate filling into the pre-baked pie crust.
Step 9
Cover with plastic wrap, pressing it directly onto the surface of the filling to prevent a skin from forming.
Step 10
Refrigerate for at least 4 hours or until set.
