  • 250 g all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 eggs
  • 125 ml extra-virgin olive oil
  • 60 ml fresh lemon juice
  • 125 ml fresh orange juice
  • 1 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 200 ml honey
  • 1 tbsp lemon zest
  • 1 tbsp orange zest
  • 0.5 tsp salt

Directions

Step 1
Preheat your oven to 175°C (350°F) and grease a 9-inch round cake pan.
Step 2
In a bowl, sift together the flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.

In another large bowl, mix the olive oil, honey, orange zest, lemon zest, orange juice, and lemon juice until well combined.

Add the eggs to the wet ingredients and beat until smooth.
Step 5
Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Step 6
Pour the batter into the prepared cake pan and smooth the top.
Step 7
Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
Step 8
Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving.
