  • 200 grams brown sugar
  • 400 grams granulated sugar
  • 240 ml heavy cream
  • 200 grams pecan halves
  • 60 grams unsalted butter
  • 5 ml vanilla extract

Directions

Step 1
Prepare a baking sheet by lining it with parchment paper or a silicone baking mat.
Step 2
In a medium saucepan, combine the granulated sugar, brown sugar, heavy cream, and butter. Cook over medium heat, stirring constantly until the mixture reaches 235°F (113°C) on a candy thermometer.
Step 3
Remove from heat and stir in the pecans and vanilla extract. Continue stirring until the mixture thickens and loses its glossy appearance.
Step 4
Quickly drop spoonfuls of the mixture onto the prepared baking sheet, forming small mounds.
Step 5
Allow the pralines to cool completely until they are firm and set.
