Step 1
In a large bowl, whisk together flour, sugar, and salt.

Cut in the cold butter using a pastry cutter or your hands until the mixture resembles coarse crumbs.

Add ice water, one tablespoon at a time, and mix until the dough comes together.

Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

Roll out one disc of dough on a lightly floured surface to about 1/8 inch thick. Cut into rectangles about 3x4 inches in size.

Place half of the rectangles on the prepared baking sheet. Spoon about 1 tablespoon of jam onto the center of each rectangle.

Brush the edges of the rectangles with beaten egg, then place another rectangle on top. Press the edges with a fork to seal.

Brush the tops with more beaten egg and poke a few holes with a fork to allow steam to escape.
