Step 1
In a large pot, heat some oil over medium heat. Add the chicken breasts and cook until browned on both sides. Remove and set aside.

In the same pot, add the onion, garlic, carrots, and celery. Cook until they begin to soften, about 5 minutes.

Pour in the chicken broth and bring to a boil. Add the chicken breasts back into the pot.

Reduce the heat and let it simmer for about 20 minutes, or until the chicken is cooked through.
