  • 450 g cheese tortellini
  • 2 cloves garlic
  • 240 ml heavy cream
  • 2 tbsp olive oil
  • 60 g parmesan cheese
  • 1 tsp salt
  • 150 g spinach
  • 400 g tomatoes

Directions

Step 1
Cook the cheese tortellini according to the package instructions. Drain and set aside.
Step 2
In a large pan, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

Add the diced tomatoes to the pan and cook for 5 minutes, stirring occasionally.
Step 4
Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
Step 5
Pour in the heavy cream and bring to a simmer. Cook for 5 minutes, allowing the sauce to thicken slightly.
Step 6
Add the cooked tortellini to the pan and gently toss to coat with the sauce.

Stir in the grated Parmesan cheese, salt, and black pepper. Cook for an additional 2-3 minutes until everything is heated through.
Step 8
Serve the Spinach Tomato Tortellini hot, garnished with extra Parmesan if desired.
