  • 1 cup brown sugar
  • 1 tablespoon dried rosemary
  • 1 tablespoon dried thyme
  • 4 garlic cloves
  • 1 cup kosher salt
  • 2 sliced lemons
  • 2 sliced oranges
  • 4 liters water
  • 1 tablespoon whole peppercorns

Directions

Step 1
In a large pot, combine water, kosher salt, and brown sugar. Stir until salt and sugar are dissolved.
Step 2
Add peppercorns, rosemary, thyme, garlic, oranges, and lemons to the pot.
Step 3
Bring the mixture to a boil, then remove from heat and let it cool to room temperature.
Step 4
Once the brine is cool, place the turkey in a large container or brining bag and pour the brine over the turkey, ensuring it is fully submerged.
Step 5
Refrigerate the turkey in the brine for 12-24 hours, turning occasionally to ensure even brining.
Step 6
Before cooking, remove the turkey from the brine, rinse it thoroughly with cold water, and pat it dry with paper towels.
