Step 1
Place the turkey carcass in a large stockpot and add water to cover.

Bring to a boil, then reduce heat and simmer for 1-2 hours.

Remove the carcass and pick off any remaining meat. Set the meat aside and discard the bones.

Strain the broth through a fine mesh sieve and return it to the stockpot.

Add the carrots, celery, onion, garlic, salt, pepper, thyme, parsley, and bay leaves to the broth. Bring to a boil.

Reduce heat and simmer for 20-30 minutes, until the vegetables are tender.

Add the pasta and turkey meat to the soup. Cook until the pasta is tender, about 10-15 minutes.
