  • 2 bay leaves
  • 700 ml beef broth
  • 900 grams beef chuck
  • 0.5 teaspoons black pepper
  • 3 carrots
  • 2 celery stalks
  • 3 garlic cloves
  • 2 tablespoons olive oil
  • 1 onion
  • 150 grams peas
  • 4 potatoes
  • 1 teaspoon salt
  • 1 teaspoon thyme
  • 2 tablespoons tomato paste

Directions

Step 1
Heat the olive oil in a large pot over medium-high heat.
Step 2
Add the beef chunks and brown on all sides. Remove and set aside.
Step 3
In the same pot, add the chopped onion and garlic, and cook until softened.
Step 4
Add the carrots, celery, and potatoes, and cook for a few minutes.
Step 5
Stir in the tomato paste, then add the beef broth, bay leaves, thyme, salt, and pepper.
Step 6
Return the browned beef to the pot.
Step 7
Bring to a boil, then reduce heat and let it simmer for about 2 hours, or until the beef is tender.
Step 8
Add the frozen peas in the last 10 minutes of cooking.
Step 9
Remove the bay leaves before serving. Enjoy your stew hot!
