Colcannon is a traditional Irish dish made with mashed potatoes and cabbage or kale. It is creamy, comforting, and perfect as a side dish.
Directions
Step 1
Place the potatoes in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for about 15-20 minutes, or until potatoes are tender.
Step 2
While the potatoes are cooking, melt 2 tablespoons of butter in a large skillet over medium heat. Add the chopped cabbage and cook until soft and lightly browned, about 10 minutes.
Step 3
Drain the potatoes and return them to the pot. Add the remaining butter and milk, then mash until smooth.
Step 4
Stir in the cooked cabbage and green onions. Season with salt and pepper to taste.
Step 5
Serve hot as a side dish.
