A quick and healthy stir-fry recipe with chicken and a variety of colorful vegetables. Perfect for a weeknight dinner.
Directions
Step 1
In a small bowl, mix the soy sauce, cornstarch, and water. Set aside.

Heat 1 tbsp of vegetable oil in a large pan or wok over medium-high heat.

Add the chicken slices and cook until they are no longer pink. Remove the chicken from the pan and set aside.
Step 4
In the same pan, add the remaining 1 tbsp of vegetable oil.
Step 5
Add the garlic and ginger, and sauté for about 30 seconds until fragrant.

Add the broccoli, carrot, and bell pepper to the pan. Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp.
Step 7
Return the chicken to the pan and pour the soy sauce mixture over the chicken and vegetables. Cook for another 2-3 minutes until the sauce has thickened.
Step 8
Garnish with chopped green onions and sesame seeds before serving.
