Pork Sinigang

A traditional Filipino sour soup made with pork and a variety of vegetables, perfect for a comforting and hearty meal.

Ingredients

  • 2 eggplant
  • 2 tbsp fish sauce
  • 2 green chili
  • 1 onion
  • 0.5 tsp pepper
  • 500 g pork belly
  • 1 radish
  • 1 tsp salt
  • 40 g tamarind soup base mix
  • 2 tomato
  • 1.5 L water
  • 1 bunch water spinach

Directions

Step 1
In a large pot, bring the water to a boil.
Step 2
Add the pork belly cubes and cook until tender, about 45 minutes.
Step 3
Add the tomatoes and onion to the pot and continue to simmer for 10 minutes.
Step 4
Stir in the tamarind soup base mix until well dissolved.
Step 5
Add the radish, eggplant, and green chilies. Cook for another 5-7 minutes until the vegetables are tender.
Step 6
Season with fish sauce, salt, and pepper to taste.
Step 7
Finally, add the water spinach and let it cook for an additional 2-3 minutes.
Step 8
Serve hot and enjoy your Pork Sinigang.
