Step 1
Preheat your oven to 180°C (350°F).

In a large skillet, heat the olive oil over medium heat.

Add the diced onion and cook until translucent, about 5 minutes.

Add the minced garlic and cook for another minute.
Step 5
Add the ground beef to the skillet and cook until browned. Drain any excess fat.

Stir in the cumin, salt, and pepper. Remove from heat.

Spread a thin layer of enchilada sauce on the bottom of a baking dish.

Fill each tortilla with the beef mixture and a sprinkle of shredded cheese. Roll up and place seam-side down in the baking dish.

Pour the remaining enchilada sauce over the top of the enchiladas and sprinkle with the remaining cheese.

Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
