  • 0.5 cup breadcrumbs
  • 2 eggplant
  • 3 cloves garlic
  • 3 tablespoons olive oil
  • 0.5 cup Parmesan cheese

Directions

Step 1
Preheat your oven to 200°C (400°F).
Step 2
Slice the eggplants into 1/2 inch thick rounds.

Arrange the eggplant slices on a baking sheet lined with parchment paper.

Brush both sides of the eggplant slices with olive oil.

Sprinkle minced garlic, salt, and black pepper evenly over the eggplant slices.

Bake in the preheated oven for 20 minutes, flipping the slices halfway through.
