  • 10 g black pepper
  • 400 g bucatini
  • 150 g pecorino romano cheese

Directions

Step 1
Bring a large pot of salted water to a boil. Add the bucatini and cook until al dente, according to package instructions.

While the pasta is cooking, finely grate the Pecorino Romano cheese and set it aside.
Step 3
In a large pan, toast the freshly ground black pepper over medium heat until fragrant, about 1-2 minutes.

Reserve 1 cup of the pasta cooking water and then drain the pasta.
Step 5
Add the hot pasta to the pan with the toasted pepper. Gradually add the grated Pecorino Romano cheese, tossing the pasta to coat evenly. Add the reserved pasta water a little at a time to create a creamy sauce.
Step 6
Continue to toss the pasta until the cheese is melted and the sauce is smooth. Serve immediately.
