  • 500 g all-purpose flour
  • 250 ml cold water
  • 5 g salt
  • 450 g unsalted butter

Directions

Step 1
In a large mixing bowl, combine the flour and salt.
Step 2
Add 100g of butter to the flour mixture and rub it in until it resembles breadcrumbs.
Step 3
Make a well in the center and pour in the cold water. Mix until a dough forms.
Step 4
Wrap the dough in plastic wrap and refrigerate for 30 minutes.
Step 5
Roll out the dough into a rectangle on a floured surface.
Step 6
Place the remaining butter between two sheets of plastic wrap and pound it flat to match the size of the dough rectangle.
Step 7
Place the flattened butter on one half of the dough and fold the other half over to cover it.
Step 8
Roll the dough out again to a rectangle, then fold into thirds. Repeat this process 5 more times, refrigerating the dough for 15 minutes between each roll.
Step 9
After the final fold, refrigerate the dough for at least 1 hour before using.
