  • 30 g cornstarch
  • 180 g dark brown sugar
  • 4 egg yolks
  • 240 ml heavy cream
  • 1 tsp salt
  • 60 g unsalted butter
  • 1 tsp vanilla extract
  • 720 ml whole milk

Directions

Step 1
In a medium saucepan, combine the dark brown sugar, cornstarch, and salt.

Gradually whisk in the whole milk and heavy cream until smooth.
Step 3
Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and comes to a boil, about 7-10 minutes.
Step 4
In a separate bowl, whisk the egg yolks. Slowly pour in about 1/2 cup of the hot milk mixture, whisking constantly to temper the yolks.
Step 5
Return the tempered yolk mixture to the saucepan and cook for an additional 2-3 minutes, stirring constantly.
Step 6
Remove the saucepan from heat and stir in the unsalted butter and vanilla extract until fully incorporated.
Step 7
Pour the pudding into individual serving dishes and cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming.
Step 8
Refrigerate for at least 2 hours or until set before serving.
