In a large bowl, whisk together the flour, ginger, cinnamon, baking soda, cloves, and salt.

In a separate large bowl, beat the butter and brown sugar together until light and fluffy. Add the egg, molasses, and vanilla extract, and beat until well combined.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Divide the dough in half, flatten into disks, and wrap in plastic wrap. Refrigerate for at least 1 hour.

Preheat the oven to 175°C (350°F). Line baking sheets with parchment paper.

On a lightly floured surface, roll out one disk of dough to about 1/4-inch thickness. Use cookie cutters to cut out gingerbread men shapes and transfer them to the prepared baking sheets.
