A traditional Yule Log, or Bûche de Noël, is a classic holiday dessert made of a light sponge cake rolled with a rich, creamy filling and covered with chocolate ganache. This festive treat is perfect for holiday gatherings and celebrations.

Ingredients

  • 75 g all-purpose flour
  • 5 g baking powder
  • 100 g butter
  • 25 g cocoa powder
  • 200 g dark chocolate
  • 5 eggs
  • 200 ml heavy cream
  • 100 g sugar
  • 5 ml vanilla extract

Directions

Step 1
Preheat the oven to 180°C (350°F). Line a baking tray with parchment paper.

In a bowl, whisk the eggs and sugar until the mixture becomes pale and fluffy.
Step 3
Sift together the flour, cocoa powder, and baking powder. Gradually fold the dry ingredients into the egg mixture.

Add the vanilla extract and mix until combined.

Pour the batter onto the prepared baking tray and spread evenly. Bake for 10-12 minutes or until the cake is springy to the touch.

While the cake is baking, prepare the filling. Whip the heavy cream until soft peaks form.

Once the cake is baked, remove it from the oven and let it cool for a few minutes. Then, roll it up in a clean kitchen towel dusted with cocoa powder. Let it cool completely.

Unroll the cooled cake and spread the whipped cream evenly over the surface. Roll the cake back up tightly.
Step 9
To make the ganache, melt the dark chocolate and butter together in a heatproof bowl over a pot of simmering water. Stir until smooth.
Step 10
Spread the ganache over the rolled cake, creating a log-like texture. Let it set in the refrigerator for at least 1 hour before serving.
