  • 1 bell pepper
  • 0.5 cup cheese
  • 0.5 cup cilantro
  • 4 corn tortillas
  • 6 eggs
  • 0.5 cup milk
  • 2 tablespoons oil
  • 0.5 onion
  • 0.5 teaspoon pepper
  • 0.5 teaspoon salt
  • 1 tomato

Directions

Step 1
Heat the oil in a large skillet over medium heat.
Step 2
Add the tortilla strips and cook until crispy, about 3-4 minutes. Remove and set aside.
Step 3
In the same skillet, sauté the onion and bell pepper until soft, about 5 minutes.

Add the tomato and cook for another 2 minutes.

In a bowl, whisk together the eggs, milk, salt, and pepper.

Pour the egg mixture into the skillet with the vegetables and cook, stirring occasionally, until the eggs are just set, about 3-4 minutes.
