Pastelon is a delicious Puerto Rican layered casserole made with sweet plantains, ground beef, and cheese. This savory-sweet dish is perfect for family meals or special occasions.

Ingredients

  • 15 ml adobo seasoning
  • 1 bell pepper
  • 15 ml capers
  • 4 eggs
  • 3 garlic cloves
  • 12 green olives
  • 450 g ground beef
  • 200 g mozzarella cheese
  • 1 onion
  • 4 plantains
  • 240 ml tomato sauce
  • 60 ml vegetable oil

Directions

Step 1
Preheat the oven to 175°C (350°F).
Step 2
Peel the plantains and slice them lengthwise into thin strips.
Step 3
Heat the vegetable oil in a large skillet over medium heat. Fry the plantain slices until golden and set aside on paper towels to drain.
Step 4
In the same skillet, cook the ground beef until browned. Add the onion, bell pepper, and garlic, and cook until softened.
Step 5
Stir in the tomato sauce, green olives, capers, and adobo seasoning. Simmer for 10 minutes.
Step 6
In a greased baking dish, layer half of the fried plantains, followed by the beef mixture, and then the remaining plantains.
Step 7
Pour the beaten eggs over the top and sprinkle with mozzarella cheese.
Step 8
Bake in the preheated oven for 30 minutes, or until the cheese is melted and bubbly.
Step 9
Allow to cool for a few minutes before serving.
