  • 0.5 teaspoon black pepper
  • 0.5 teaspoon cayenne pepper
  • 0.5 teaspoon garlic powder
  • 1 onion
  • 1 teaspoon onion powder
  • 2 teaspoons paprika
  • 1 tablespoon salt
  • 1 teaspoon thyme
  • 1 teaspoon white pepper
  • 1 whole chicken

Directions

Step 1
In a small bowl, mix together salt, paprika, onion powder, thyme, white pepper, cayenne pepper, black pepper, and garlic powder.
Step 2
Rub the spice mixture onto the chicken, both inside and out. Place the chicken in a resealable plastic bag, and refrigerate overnight, or at least 4 hours.
Step 3
Preheat the oven to 250 degrees F (120 degrees C).
Step 4
Place the chicken in a roasting pan, and stuff the cavity with the onion quarters.
Step 5
Bake the chicken uncovered for 5 hours, to a minimum internal temperature of 180 degrees F (82 degrees C). Let the chicken rest for 10 minutes before carving.
