  • 14 g active dry yeast
  • 1020 g bread flour
  • 60 ml olive oil
  • 18 g salt
  • 15 g sugar
  • 710 ml warm water

Directions

Step 1
In a large mixing bowl, combine warm water, sugar, and yeast. Stir until dissolved and let sit for 5 minutes until foamy.
Step 2
Add 2 cups of bread flour and salt to the yeast mixture. Stir until a smooth batter forms.
Step 3
Gradually add the remaining bread flour, 1 cup at a time, mixing well after each addition.
Step 4
Turn the dough out onto a lightly floured surface and knead for about 10 minutes until smooth and elastic.
Step 5
Place the dough in a lightly oiled bowl, turning to coat all sides with oil. Cover with a damp cloth and let rise in a warm place for about 2 hours or until doubled in size.
Step 6
Punch down the dough and divide it into 3 equal portions. Shape each portion into a ball and let rest for 15 minutes before using.
