  • 2 bay leaves
  • 500 milliliters beef broth
  • 1 teaspoon black pepper
  • 3 carrots
  • 2 celery stalks
  • 5 sprigs fresh thyme
  • 4 garlic cloves
  • 4 lamb shanks
  • 2 tablespoons olive oil
  • 2 onions
  • 250 milliliters red wine
  • 1 teaspoon salt
  • 2 tablespoons tomato paste

Directions

Step 1
Preheat your oven to 160°C (320°F).
Step 2
Heat the olive oil in a large ovenproof pot over medium-high heat. Add the lamb shanks and brown them on all sides. Remove and set aside.
Step 3
In the same pot, add the chopped onions, garlic, carrots, and celery. Cook until the vegetables are softened, about 5-7 minutes.
Step 4
Stir in the tomato paste and cook for another 2 minutes.
Step 5
Pour in the red wine, scraping up any browned bits from the bottom of the pot. Let it simmer for 5 minutes.
Step 6
Add the beef broth, bay leaves, thyme, salt, and pepper. Return the lamb shanks to the pot.
Step 7
Cover the pot and transfer it to the preheated oven. Cook for 2.5 to 3 hours, or until the lamb is tender and falling off the bone.
Step 8
Remove the lamb shanks from the pot and keep warm. Strain the sauce and reduce if necessary.
Step 9
Serve the lamb shanks with the sauce poured over them.
