Ingredients

  • 1 teaspoon black pepper
  • 1 bunch fresh thyme
  • 5 cloves garlic
  • 1 lemon
  • 2 tablespoons olive oil
  • 2 tablespoons salt
  • 1 whole chicken

Directions

Step 1
Preheat your oven to 425°F (220°C).
Step 2
Rinse the chicken inside and out, then pat dry with paper towels.
Step 3
Season the inside of the chicken with 1 tablespoon of salt and 1 teaspoon of black pepper.
Step 4
Stuff the cavity with the lemon halves, garlic cloves, and thyme bunch.
Step 5
Brush the outside of the chicken with olive oil, and sprinkle the remaining salt and pepper all over.
Step 6
Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken.
Step 7
Place the chicken in a roasting pan and roast for about 90 minutes, or until the juices run clear when you cut between a leg and thigh.
Step 8
Remove the chicken from the oven and cover with aluminum foil. Let it rest for 20 minutes before carving.
