  • 125 grams all-purpose flour
  • 2 grams baking powder
  • 240 ml cold water
  • 60 grams cornstarch
  • 1 egg
  • 450 grams large shrimp
  • 2 grams salt
  • 1000 ml vegetable oil

Directions

Step 1
In a bowl, mix flour, cornstarch, baking powder, and salt.
Step 2
In another bowl, beat the egg and add cold water.
Step 3
Combine the wet and dry ingredients to create the batter. Do not overmix.
Step 4
Heat the vegetable oil in a deep fryer or large pot to 180°C.
Step 5
Dip the shrimp into the batter, allowing any excess to drip off.
Step 6
Carefully place the shrimp into the hot oil and fry until golden brown, about 2-3 minutes.
Step 7
Remove the shrimp from the oil and drain on paper towels.
