Ingredients

  • 450 g andouille sausage
  • 2 bay leaves
  • 1 bell pepper
  • 1 tsp cajun seasoning
  • 2 stalks celery
  • 450 g dried red beans
  • 3 cloves garlic
  • 0.5 tsp ground black pepper
  • 1 onion
  • 1 tsp salt
  • 1 tsp thyme
  • 2400 ml water
  • 360 g white rice

Directions

Step 1
Rinse and sort the beans, removing any debris.
Step 2
In a large pot, combine the beans and water. Bring to a boil, then reduce heat and simmer for 1 hour.
Step 3
In a skillet, cook the sausage over medium heat until browned. Remove and set aside.
Step 4
In the same skillet, sauté the onion, bell pepper, and celery until tender.
Step 5
Add the garlic, bay leaves, thyme, and Cajun seasoning. Cook for an additional 2 minutes.
Step 6
Add the sautéed vegetables and sausage to the beans. Season with salt and pepper.
Step 7
Simmer uncovered for 1 to 2 hours, or until the beans are tender, stirring occasionally.
Step 8
Cook the rice according to the package instructions.
Step 9
Serve the red beans over the cooked rice.
