  • 10 g baking powder
  • 2 g black pepper
  • 60 g cornstarch
  • 500 g fish fillets
  • 120 g flour
  • oil for frying
  • 5 g salt
  • 240 ml water

Directions

Step 1
In a large bowl, whisk together the flour, cornstarch, baking powder, salt, and black pepper.

Gradually add the cold water, whisking until the batter is smooth and free of lumps.
Step 3
Heat the oil in a deep frying pan or deep fryer to 180°C (350°F).
Step 4
Dip each fish fillet into the batter, allowing any excess to drip off.
Step 5
Carefully place the battered fish into the hot oil and fry until golden brown and crispy, about 4-5 minutes.
Step 6
Remove the fish from the oil and place on a paper towel-lined plate to drain any excess oil.
