Arancini are traditional Italian rice balls that are stuffed with cheese, meat, or vegetables, then coated in breadcrumbs and fried to perfection. These delicious treats are perfect as appetizers or snacks.
Directions
Step 1
In a large saucepan, heat the olive oil and butter over medium heat. Add the chopped onion and sauté until translucent.

Add the Arborio rice and cook for 2-3 minutes, stirring constantly to coat the rice with oil and butter.

Gradually add the chicken broth, one ladle at a time, stirring constantly until the liquid is absorbed. Continue this process until the rice is cooked and creamy.

Remove the saucepan from the heat and stir in the grated Parmesan cheese. Season with salt and pepper. Allow the rice mixture to cool completely.

Take a small handful of the cooled rice mixture and shape it into a ball. Make a hole in the center and insert a cube of mozzarella cheese. Close the hole and reshape the ball.

Repeat the process with the remaining rice mixture and mozzarella cubes.

Place the flour, beaten eggs, and breadcrumbs in separate bowls. Roll each rice ball in the flour, dip in the beaten eggs, and then coat with breadcrumbs.

Heat the vegetable oil in a deep fryer or heavy-bottomed pot to 180°C (350°F). Fry the arancini in batches until golden brown and crispy, about 3-4 minutes per batch.

Drain the fried arancini on paper towels and serve hot.
