  • 2 celery stalks
  • 8 cups chicken broth
  • 0.5 cup chicken fat
  • 4 eggs
  • 1 cup matzo meal
  • 0.5 cup parsley
  • 0.5 tsp pepper
  • 1 tsp salt

Directions

Step 1
In a large bowl, beat the eggs and add the chicken fat, mixing thoroughly.
Step 2
Add the matzo meal, salt, and pepper to the egg mixture. Mix until well combined.

Cover the bowl and refrigerate for at least 30 minutes.

Bring the chicken broth to a boil in a large pot.

Wet your hands and form the matzo mixture into balls about the size of a walnut.
Step 6
Gently drop the matzo balls into the boiling broth.

Add the sliced carrots and celery to the pot.

Reduce the heat to a simmer and cook for 30-40 minutes, until the matzo balls are cooked through and tender.

Stir in the chopped parsley before serving.
