Step 1
In a large bowl, combine the green tomatoes, green bell peppers, red bell peppers, onions, and cabbage.

Sprinkle the salt over the vegetables and mix well. Let sit overnight to draw out excess moisture.

The next day, drain the vegetables and rinse with cold water to remove excess salt. Squeeze out excess water.

In a large pot, combine the vinegar, sugar, mustard seeds, celery seeds, and turmeric. Bring to a boil.

Add the drained vegetables to the pot and return to a boil. Reduce heat and simmer for 5 minutes.

Pack the hot chow chow into sterilized jars, leaving 1/2 inch headspace. Seal the jars and process in a boiling water bath for 10 minutes.
